Carolina Pulled Pork Sandwiches

Carolina Pulled Pork Sandwiches
Ingredients:

2.5 LB. Pork Butt or Pork Shoulder Roast
2-3 Tbsp. of your favourite BBQ rub
1 Tbsp. Olive Oil
1.5 c. Bones & Marrow Bone Broth
1/4 c. Apple Cider Vinegar
1 Tbsp. Liquid Smoke
1 batch Carolina Mustard BBQ Sauce (recipe on our website)

Top with coleslaw and pair with your favourite burger bun

instructions:

Rub pork all over with the BBQ rub.

Heat oil in a large skillet or Dutch oven on medium high heat. Sear pork until nicely browned on all sides, about 2-3 minutes per side.  (Note: this step isn’t required but will add some extra flavour to the pork.)

Transfer pork to the slow cooker, and add the bone broth, apple cider vinegar and liquid smoke.

Cook on low for 8 hours or high for 4 hours, turning pork over halfway through cooking.

After the pork is done cooking, transfer meat to a large bowl and shred with two forks.

Pour approximately 3/4 of the Carolina Mustard sauce over top and toss to coat.

Keep warm until ready to serve.

Assemble the sandwiches on the buns with pork and coleslaw.

Serve with remaining sauce on the side.
